Red Pea Soup

Ingredients

  • 2 cups kidney beans, soaked and drained
  • 10 cups water 
  • 2 Tsp oil
  • 2 med onions, diced
  • 1 lg green pepper, diced
  • 3-4 cloves garlic, minced
  • 1 Scotch bonnet pepper, minced (I used 3)
  • 4 scallions
  • 1 lg carrot, diced
  • 1 cup sweet potato
  • 2 tsp thyme
  • 1 cup coconut milk
  • 1/2 tsp allspice
  • 1/2 tsp black pepper
  • 1 tsp salt
  • (Add other veggies if desired)

Directions

  1. Cook beans in water on medium heat for 45 minutes.
  2. Drain, reserving 5 cups of the liquid and set aside. Saute onions, green pepper, and garlic in oil for 7 minutes.
  3. Add beans, cooking liquid and remaining ingredients except salt.
  4. Simmer for 1 – 1 1/2 hours on low.
  5. Add salt to taste. (serves 8 ppl approx.)

    This looks really good, I am definitely trying this, this weekend….I was looking for recipe for a soup and this is a great one.
