Red Pea Soup

Ingredients
- 2 cups kidney beans, soaked and drained
- 10 cups water
- 2 Tsp oil
- 2 med onions, diced
- 1 lg green pepper, diced
- 3-4 cloves garlic, minced
- 1 Scotch bonnet pepper, minced (I used 3)
- 4 scallions
- 1 lg carrot, diced
- 1 cup sweet potato
- 2 tsp thyme
- 1 cup coconut milk
- 1/2 tsp allspice
- 1/2 tsp black pepper
- 1 tsp salt
- (Add other veggies if desired)
Directions
- Cook beans in water on medium heat for 45 minutes.
- Drain, reserving 5 cups of the liquid and set aside. Saute onions, green pepper, and garlic in oil for 7 minutes.
- Add beans, cooking liquid and remaining ingredients except salt.
- Simmer for 1 – 1 1/2 hours on low.
- Add salt to taste. (serves 8 ppl approx.)

This looks really good, I am definitely trying this, this weekend….I was looking for recipe for a soup and this is a great one.
